Did I mention I'm back?

What a crazy couple of weeks! I feel like I've been going 10,000 miles an hour, vacation and work and all. I'll just say that the trip was great, and direct you over to my other blog (muddysweetpotato.blogspot.com) where I talked a little more about it and will be posting some plant pictures (if you're into that kinda thing). This blog is on the fast track to retirement as my interests start focusing more on urban farm stuff and less on cooking, but I thought I'd give you a coupla food pictures from the trip.

Here is some checca or bruschetta I made from the tomatoes we picked at a U-Pick farm in Dickinson, TX (Fruits 'n Such). It was divine.

And o'course, a couple of peach crisps (before going into the oven) made with the gorgeous peaches we picked...

WiFi Kampground

We're on the second night of our vacation trip and I'm enjoying our KOA's free wifi. Josette is the handiest $300 laptop ever! I love KOAs, by the way. Very inexpensive, pet friendly and so nice. Our cabin here is right under a big pecan tree and next to a meandering creek. Talk about classic Texas!

Lena and Poo are moving this week, and traveling with two cats and a dog in a Civic is rather excruciating in 100 degree weather. It's nearly over though. Then the kitties will not have to suffer through the move later in the summer with the moving van and all that.

Our road food consisted of:
Marked down organic cereal
Aseptic soymilk
Bananas
Apples
Cucumber slices
Broccoli flowerettes
Raisin scones
Cocoa almond cookies
Peanut-butter jelly saltines
and homemade Mini veggie corn dogs

I only had about 4 hours to prepare food so I was happy with what I came up with. We did get take out from Denver's famous Watercourse foods last night (I got a salad that had seitan steak strips, homemade onion rings, cannellini beans, steamed butternut squash over lettuce with maple dijon dressing. It was good but the dressing was WAY too tangy for me and I ended up not eating all my salad because of it. Russell got a veggie burger with fries and chips. We also got a chocolate chip cookie and a brownie. All in all, it was pretty decent but not worth the price tag) and tonight we got take out from an Indian food restaurant in Lubbock, TX of all places. Samosas, naan, channa masala and potato green bean curry with basmati rice. Soooo good. I've been missing real Indian food like crazy!! We even have leftovers.

Here is a tip most of you probably already know. 411 is information on your phone, but you get charged for the call. Instead, dial 1-800-FREE411. It's a bit more annoying but there is no extra charge. That's how we found an Indian restaurant.

Well, gots to go to wake up early tomorrow and head in to San Antonio. Live oaks, hills, fresh tortillas and pico de gallo here we come!!! :)

Weekend wonderful.


Saturday morning, breakfast outdoors at the Cateye Cafe. I love that mural.

Then we headed over to the fish technology center for the watershed festival with my coworker Kim because we heard there was a bear there. There wasn't. Kim is a bear ADDICT. We did get this goofy picture with a giant metal fish though.


Then we set up our tent at Greek Creek campground on the Gallatin river. It has been over two years since we've been camping and we've never camped in Montana, so we were pretty psyched. (EXCEPT I was completely freaked at the thought of running into a bear)

We hiked Swan Creek and Russell particularly enjoyed this bridge.

I was thrilled to see some wildflowers, finally!!!

Then we went to see the remnants of an electrical train line through Maudlow, on Sunday. As you can see, it is very exciting. :-)

Snoopy had a lot of fun finding something gross near the river and rolling in it until she slipped while rolling on her back and her head fell in the river and go soaked. Silly girl.

We had a great weekend.

This morning I went in for jury duty and it pretty much looked like I was going to be on the jury for a 4 day long criminal case until they asked me what I thought about guns. "I don't like them at all; I don't think anyone should have them; I don't believe in hunting." When asked if I could have a nonprejudicial view for the case I said "I think I'd have a pretty hard time putting myself in the defendant's shoes with my personal belief system." Then they asked for me to be dismissed.
Luckily I got a few more rows of my log cabin in while I was waiting in line. :-)

Refreshments, road trip, reorganizing randomness

First, I want to share this hilarious picture of Snoopy. Ok, now I can go on with my post.
On Friday I picked up some half-off burger buns and Amy's burgers and vegan ravioli from a local hfs. This was a treat for me and Russell for him finally finishing his grad school course work (now it's just thesis time!)

Then on Saturday after work we hit the road for a little road trip to the Chief Joseph Scenic highway. I packed up our dinners, mine was in my tiffin.
In retrospect, this was way too much food, even for me, and I consider myself to have the appetite of an elk (they are ALWAYS eating!) I really could've gotten away with 1/2 as much macaroni and cheeze. Seeing as it was there, though, I did end up eating it all. How silly is that?
This is the incredibly awesome place we picked to eat dinner, you can't tell, but when Russell took this picture he was standing on the bank on this river, which was our view during out meal.

Yes, the scenic highway was very scenic. Is it weird to say I'm getting bored of snow capped mountains? I see them every day.

Yesterday we stopped at a thrift store and I found two complete vintage snack sets!!! Woo hoo! I've envied Emmy's for far too long. :) I wanted to use them right away but was not in the mood for scones or cookies so I just made some toast with jam. Next weekend I'll totally use them for something more snacky though. :-)

I caught this slumber party last night:
They may not be snuggling with each other yet, but they're getting pretty close. :-) You may not be able to tell but Snoopy has lost a lot of weight! She's down to 57 pounds, which, according to our records is 8 pounds less than when we first adopted her in December. I guess walking ~5 miles a day is paying off!

So, I volunteered to work today, and last night I started freakishly cleaning at 9 or 10 pm. I ended up staying up until 4 AM reorganizing and cleaning. I've mentioned before that we're going to be moving into Russell's parents house when we move, so it's important for us to pare down as much as we can before then. I want to do a little at a time, eventually making it so everything we need is in the downstairs (living room and kitchen) and the bathroom. So last night the downstairs got a bit of an overhaul. I moved Russell's desk down from the office and took the table his computer was on (my old desk) and moved it to the kitchen for a dining table, and took our big dining room table and put it our by the dumpster in the "furniture relocation area". :-) Of course, Russell helped with the heavy lifting. He was honestly suprised at how much I did on my own, though. He's also psyched that I moved his stereo and record player downstairs so now he can listen to his daft punk record while working on his thesis. And I'm psyched he can work on his thesis while I read, putter around in the kitchen, knit while watching a movie or do a yoga video. Here is how our little studio is developing.
Movie watching/knitting/yoga area. I currently have Bleak House out on netflix (haven't gotten a chance to watch it yet) and am borrowing the original Hitchhiker's Guide to the Galaxy from a coworker, which is completely goofy and off the wall. I can pull the futon back and have a good floor for yoga, you can see my mat leaning up against the TV. I could seriously sleep on the futon everyday but Russell finds it uncomfortable. I wonder if a thicker pad would make it more to his liking.

Backing up you can see my grammie's chair (which is next to my bookshelf filled with cookbooks and such) which I like to sit on to read and pick recipes for dinner. Russell's desk (was his dad's growing up, I think) with scandia shelves with his record player and stereo. Our filing cabinet and printer are between the futon and the desk. You can also see our exercise bike and part of our freezer. It looks a bit cluttered but I think it's more cozy than cluttered.

Here is the new table for the kitchen. I had found the in the other "furniture relocation area" i.e. the side of the road, when we first moved in and used it for a computer desk up until my laptop Josette came along and the need for a computer desk disappeared. :) I'm not sure if the lamp is going to stay there, but I really like the newer, smaller table. It kinda reminds me of the cover of Table for Two.
And here my breakfast: oats with a variety of yummies from the bulk bins (raisins, sliced dates, sliced dried figs, dried cherries, sunflower seeds, walnuts and slivered almonds) with soymilk. Along with a pot of Constant Comment tea. Yum!

Food food food!! :-)

First, I have good news. I go back to part time after our vacation in early June. Hooray! I am happy to have made extra $$ to pay our unexpected owed taxes to the gov't, but I really miss being a stay at home wifey. Plus working all the time makes me rather bitchy. And if you read the tagline to my blog, I want to be a happy human being!

Alright, so I've developed a rather rigid routine for weekdays:
Wake up
Walk the dog 2 1/2 miles
Work
Walk the dog 2 1/2 miles
Cook
Eat
Clean up a bit
Play with pets

So, I have been doing a bit of cooking and have meals to share with you all finally!! :-)

I stayed true to the McDougall plan for about two weeks, which is pretty much average length for me and dieting. I got down to the lower to mid 160s again, which is fine for me. I just started binging again and knew it was due to me trying to restrict my variety of foods. Snoopy has lost weight due to all the walking. She's now down to 57.3 and still dropping. That's 8 pounds less than when we adopted her in December!

Plus, someone over on the McDougall boards totally ticked me off. (See? Bitchy.)
So here are some mostly-McDougall foods. I am a vegan and so obviously eat relatively close to his plan anyway. I just like a little oil from time to time and I think that's fine.
Chickpea curry with cabbage and cauliflower (pressure cooked!), brown rice cooked with carrots, mustard and dill, with peas and carrots.

Super simple soup: recipe from my coworker (can of black beans, can of rotel, can of corn). I used frozen corn and regular tomatoes+canned jalapeƱos. VERY good. Served with home baked tortilla chips, steamed fresh green beans and pineapple slices.
Garbonzo bean "tuna" salad sandwich with cucumbers, red pepper strips, apple sauce and molasses cookies with organic sprinkles. :-)
Homemade mini-pizzas with tofu pate (French Bread Pizza recipe from Ultimate Uncheese Cookbook, same as Tomato Tinged Tofu Pate from Vegan Sourcebook... one of Russell's fave recipes), spinach, peppers and almonds, jalapeƱos and an apple. Don't you love that blackened look of the crust? That's what happened when I took the pizzas out from under the broiler and this one was actually on fire. LOL Still delicious though.
"Sadie's Vitality Broth" with shell pasta from Vegan Vittles. I LOVE this recipe it is so good and so quick and easy. I was craving it before I made it and craving more for lunch today. Yum. Homemade bread, kiwi and freezer burned french cut greenie beanies on the side.

Roasted asparagus, strawberries, locally made tortilla, beans (from a can), spanish rice (from a box) and enchilada sauce on top.

This is the first time I ever bought asparagus. I made it in the toaster oven. Russell said if I continue to make it like that I can make asparagus more often. :-)
